What brands of lenses can I use with my Canon Digital Rebel XT?

Well, obviously Canon EF and EFS lenses, but not the ancient Canon FD lenses, and Canon manual focus lenses are not recommended.
Then you can use a bunch of third party brands: Sigma, Tamron, Tokina, Quantaray, etc all make lenses for several brands, including lenses with a Canon EF mount.
And if you want to go crazy, I’ve heard of people that use Leica and other lenses with an adapter ring.
